Tortilla chips and cheap food

You could like chips and dip more than me, but it’s not likely. I can eat them everyday for months with an endless variety of dips. I love them…but I have a problem. All chips are made from cheap food – I can eat an entire bag, have an exploding stomach, and still be hungry.

It’s the sign of cheap food – eating and still being hungry. The equivalent of the worst blind date. You give up a whole evening, pay for dinner, and head home completely unfulfilled. Most people don’t think about bad dates when buying food, they only see price tags. The cheaper the item the better it is. But cheap food usually means low quality food. Something so empty of nutrients and vitamins, that we can eat – and eat – and still be hungry.

Unfortunately, the same is true for the expensive chips. I’ve tried them all, from natural food stores to Whole Foods, and even the farmers market – with the same result, overeating and still hungry. I was so upset and about to give up on chips and dip, when it occurred to me I could make my own.

Now, this is a serious commitment. Spending an hour of my time, sweating with a roller, to make something I can buy at the store for two dollars. But, being Sustainable Steve I had to try it, and so I bought a bag of whole wheat, and went through the process – kneading, rolling, and baking. My first taste was…amazing.

These are real tortilla chips with taste and flavor. No salt or chemical flavoring added. And I can only eat a few – no more than seven or eight at a time. Which completely changes my chip and dip routine – I’m eating less chips and therefore less dip. Feeling full and losing weight.

A great example of how cheap food has penetrated every corner of our lives. It seems like a simple thought – homemade tortilla chips – but I was so conditioned to think that’s impossible. With thousands of commercials ringing in my head – like Lays potato chips, “you can’t eat just one.”

I was convinced overeating chips was natural. But here I am, noshing on whole wheat delights, and wondering how I ever did it differently. Beware cheap food and commercials, they can trick you into believing anything.

Periodontist: remove plaque by brushing, toothpaste doesn’t help – only adds sweetener

The more I research toothpaste the scarier it becomes. Not only does it contain sweetener and chemicals, but it may not even help our teeth:

As a Periodontist, I get asked about recommendations for toothpaste all the time. What most people don’t know is that plaque is removed by the mechanical action of the toothbrush bristles against the teeth and gum whether toothpaste is used or not. Much to the toothpaste manufacturers chagrin they have never been able to prove that using toothpaste increases plaque removal, it simply makes for a better experience by adding some flavor, thus the title.

Which is Toothpaste is just a spoon full of sugar.

If we could only get more dentists and periodontists to go on record and offer support for alternatives, like this mom received when she took her family off toothpaste.

Personal story from a mom who stopped using toothpaste to get rid of cavities

The first thing to say is that she had dentist approval. She also had her kids stop eating processed sugar. And that might’ve been the reason the cavities stopped, but she was a healthy mom to begin with.

The results were a big success, from No Toothpaste, No Cavities:

Before we stopped toothpaste, and before we eliminated processed sugars, one of my children had a small cavity between two molars — not big enough to drill out, but enough for the dentist to watch.

At our first six month check-up post toothpaste, no cavities.

A year later, no cavities.

Eighteen months later, still no cavities.

Two years later, you guessed it, no cavities.

Surf event: Handplane Demo Day – try out new surf toys for free – (this Saturday)

Another demo day for y’all to come out and play with some surf toys. The poster says it all:

 

 

I’ve been to several of these and make sure to bring some surf fins (wetsuit optional with the water so warm). Of course, many people will be bringing their own homemade products for you to test out. Professionally crafted bodysurfing handplanes will definitely be there. Maybe some Paipo’s for bodyboarding.

Easy homemade mozzarella made with 1 gallon of milk – combine with tomatoes for Insalate Caprese

The full heat of summer is here and I’m drowning in tomatoes. I’ve been searching for new ways to use my bounty, beyond the basics of salsa, marinara sauce, and jarring for winter stores.

Next on my list is homemade mozzarella with a surprisingly easy recipe:

 

Mozzarella is one of the easiest cheeses to make, it only takes 30 minutes and the taste can’t be beat!

The ingredients are simple although a couple of them you may have to search a bit for, but the end result is worth it–especially when you can say “I made it myself!”

 

All the recipe calls for is 1 gallon of milk and tiny amounts of citric acid, rennet tablet, and cheese salt (though one recipe said you can skip the salt).  Extremely simple and cheap ($2.50) when it comes to making cheese and when combined with tomatoes and basil becomes:

 

Insalata Caprese

 

Insalata Caprese (salad in the style of Capri) is a simple salad from the Italian region of Campania, made of sliced fresh buffalo mozzarella, tomatoes and basil, seasoned with salt, and olive oil. – Wikipedia

Homemade organic toothpaste: baking soda and water (that’s it!)

A few months ago I made the switch from store toothpaste to the homemade version. There were so many recipes available on the internet that it was hard to find the right one. After several months of experimenting I’ve found the perfect recipe:

Baking Soda + Water

I can’t believe it either, but it works really well. Baking soda is a natural cleanser that helps control pH balance and neutralizes any substance that causes stains or odors. This means that not only will your family’s teeth shine, but they will have much less phlegm.

This also allows you to help your kids skip all the chemicals in the store-bought toothpaste, including fluoride which has some controversy surrounding small children.

No exact measurements are required, but you will notice that baking soda tends to stay dry. So just add a little water every so often.

I store mine in a used plastic container and that’s it!

You really can’t beat this deal since baking soda is so cheap. Plus, you have no waste products, a great bonus considering that very few of those toothpaste tubes are recyclable.

Should you be tempted to try out some of the other homemade toothpaste recipes, here is some advice.

Absolutely skip the hydrogen peroxide. I can’t believe people recommend this but they do say it matches the “cleaning power” of store toothpaste. That’s a scary thought.

I’ve also tried adding salt, coconut oil, and vegetable glycerin. Only coconut oil wasn’t dreadful and is promoted as “naturally anti-bacterial and anti-viral,” but I didn’t notice any benefit.

Finally, if you want some flavor I recommend cinnamon, but add just a dash as it is pretty powerful. Many sites also recommend mint but it hasn’t worked for me. I’ve even used fresh garden mint to no avail. Maybe I need to grind it to dust, mortar and pestle style.
